Portland’s Salt & Straw is one of the country’s most cult-favorite, chef-driven ice cream shops. Visit any of their four Portland locations (and four more in Los Angeles) and prepare to wait in line for at least 30 minutes. The last time we indulged in Salt & Straw, it was at the Esquire Building location on NW 23rd Ave.

I think we played Hang Man with my son to pass the time. But, once I dug into that chocolate gooey brownie cone, let’s just say I forgot how many limbs the game had gone through. Trust me. It’s worth it.

So, imagine my utter (cue squeal) joy when Salt & Straw founders Kim and Tyler Malek announced their first-ever ice cream cart pop-up in Seattle. Could this mean they’re scouting locations? Will I be licking my way into a scoop of almond brittle with salted ganache in some corner of Seattle someday? One can wish.

Anyway, the pop up–which will occur Friday, August 19 through Sunday, August 21–will be housed inside the epic La Marzocco Cafe at KEXP (472 1st Ave N) in Seattle Center to celebrate an affogato collaboration between the Italian espresso machine manufacturer and Salt & Straw. But, back to the ice cream flavors. Salt & Straw will be featuring: Toasted White Chocolate, Sea Salt with Caramel Ribbons, Gooey Chocolate Brownie, Strawberry Honey Balsamic with Black Pepper, and Roasted Parsnip & Banana Sorbet.

Hours are noon to 8 p.m. Friday and Saturday and 10 a.m. to 3 p.m. Sunday. Scoops are $5 each with $1 from every scoop sold benefitting Seattle’s KEXP–also worth waiting for.

How is there not a line out the door?

Each time I return, for the mortadella sandwich with whipped ricotta and “pistachio jazz” at lunch or the black garlic knots at dinner, I marvel that the massive crowds of Seattle dining scenesters have yet to find it.
