Local fresh white peaches are puréed at the height of their ripeness with peach bitters and shaken lightly, and then the whole mix is given a bracing Prosecco header that fizzes and sparkles. A sprig of fresh thyme adds just a little green-grass earthiness. These peachy beauties go down easy as cold lemonade on a smoldering summer day, and taste even better when sipped on Volterra’s pretty stone patio.
