Happy 9th, Tilth! 9 courses + 9 wines = $90
Owner and chef Maria Hines celebrates Tilth's 9th anniversary with special dinner
By Seattle Mag August 19, 2015
It is hard to believe that Maria Hines’ first restaurant, Tilth in Wallingford, is now on the verge of tween-dom. It seems like just yesterday that Hines, who beat Chef Morimoto on Iron Chef America in 2010, earned herself a James Beard Award and witnessed her baby earning New York Times accolades as one of the country’s best new restaurants.
Not much has changed, except now there is also the divine Agrodolce, Golden Beetle and those freakin’ insane za’atar-flecked French fries.
In celebration of Tilth’s ninth anniversary, Hines and her team are hosting dinner on Sept. 1 and 2 with a menu inspired by local farms and fisheries, and capturing the late summer harvest. The nine-course tasting menu (a darn steal at $90) features:
Hors d’Oeuvre
mission fig, farmer’s cheese, marcona almond
Carrot Dashi
house fermented vegetable, wakame, pea tendril
Apulum Garden Heirloom Tomato
balsamic pearl, basil, pecorino crisp
Sweet Pepper Flan eggplant, pine nut, balsamic gastrique
House Made Tagliatelle
abalone mushroom, dandelion, tomato beurre blanc
Loki Sockeye Salmon
black nile barley, summer squash, smoked tea foam
Bartels Farms Beef Striploin
charred radicchio, alvarez farms potato, sweet pepper coulis
Black Sheet Creamery Peppered Fromage
peach mostarda, candied pecan
Theo Chocolate Ganache Cake
chocolate cookie, cocoa cream, sea salt
For reservations to the dinner, visit Tilth’s website or call 206-633-0801.
