This Spinach Smoothie Bowl, a perfect-for-summer recipe from Mackenzie Schieck of local blog Pine and Crave, is as easy to make as it is delicious. Plus, with the highly-anticipated warm weather flooding the Pacific Northwest, you can kick your old breakfast routine and replace it with a seasonal dish to match the summer colors we’ve been waiting months for.
Bring on the sandals and suntans.
Ingredients:
1 small frozen banana
1/4 cup cashews
1/4 cup non-dairy milk (almond, rice, hemp, etc.)
1 cup spinach
1 or 2 prunes for extra sweetness (optional)
Instructions:
1. Process all ingredients together in a blender until smooth, pour into a bowl, then top with your choice of fruit, granola, and/or nuts.
